Chicken Couscous

So this is a just a wee meal I came up with the other night in an attempt to use up some extra couscous and chicken breasts. It is genuinely the best couscous dish I have had for a while. The anchovies melt into the chicken and create a fantastic meaty flavour - unreal flavours :-)

Roughly 1-2 cups of Couscous (just depends chicken-couscous ratio you want)
Chicken stock for making couscous as packet instuctions
4 chicken breasts
1 tin of anchovies in oil
Dash of extra vigin olive oil (dependant on how much couscous)
2 cloves of garlic
1/2 Chili
Juice and zest of 1/2 - 1 lemon
Sprinkling of sugar (to taste)
Salt to taste (unlikely you'll need much due to anchovies)

Fistly open the anchovies and pour into a small bowl including the oil. Crush the galic and finely chop the chilis and add them to the anchovies. mix with a tea spoom cover in cling film (plastic wrap) and set aside. The longer you leave this the better the final product (leave it at least and hour or 2)

Take the chicken breasts and make a small slice lengthways along the underside of the breast (enough of a slit to fit 1 or 2 anchovies in). Place 1 or 2 anchovies in the slits + small amount of the oil and chopped chillis which have been sitting in the anchovies bowl. Place on a tray and into a pre heated oven (180C) fo about 25 minutes. (alternatively you can George Foreman them)

In the meantime mix up the couscous as instructed on the packet. Leave to rest in a warm place. 

Take out the breasts out and chop'em up and mix into the couscous and add the additional anchovy oil (inc chilis and galic), lemon juice & zest, oil, sugar and salt to taste. (dont be shy with the sugar as believe me it really does make this taste good)

Serving Suggetsions:

Normally I'd suggest cherry or plum tomatoes or somthing with  a bit of bite but actully the lemon juice does that for you, so serve it with some steamed green veg. (gotta be healthy somewhere). Enjoy
